I took this week off of work.  And, it has been a stay-at-home vacation.  It has been wonderful!!!  I've had time to linger over a good cup of coffee each morning, and I've been able to mark a lot of things off of my to do list.

Yes, this week has been a good thing for me.

Look What I Found

We've been going through everything in my home office.  We have to move everything out of the room temporarily because I am having the room customized with built-ins.

I found this pair of postcards that I got at an antique show about thirty years ago.  I had them framed, and hanging in one of our bathrooms before we moved.

They made me laugh when I purchased them, and they still do.  I think they are going in the garage sale box.

My answer to yesterday's question is that I wanted to be a doctor when I grew up.  I'm definitely not a doctor.  What can I say other than life happened.  I met and fell in love with a wonderful guy, and we will soon be celebrating our thirty-ninth wedding anniversary.  And, one funny thing is that I now work in a health system, but on the administrative side.

A Pack Of Nabs

Many snack crackers manufactured by Lance are commonly referred to as Nabs. The term Nabs today is used to refer to any type of snack crackers, most commonly those made by Lance, Inc.

Many in the southeastern United States prefer the term Nabs to mean the Toastchee brand of Lance crackers. The term has its origins back to 1924 when the National Biscuit Company (Nabisco) introduced a snack, put in a 5-cent sealed packet called "Peanut Sandwich Packet".  This term caught on and is still widely used today.

In the south, you often hear people refer to a pack of Nabs.

I've liked having a pack of Nabs since I was a child, but today I choose the Reduced Fat version.

And, today I prefer mine with a cold caffeine-free diet Pepsi over crushed ice.

"The Lily Of The Valley" is a Christian hymn written by William Charles Fry (1837-1882) in London for the Salvation Army.  Ira D. Sankey arranged the words to the music of "The Little Old Log Cabin In The Lane" composed by Will Hays.  "The Lily Of The Valley" is a gospel standard and appears in almost all Protestant hymnals.

Pink Saturday - July 25, 2009

I'm having a bit of a problem I could use your help with.  I recently added the Google Friend Connect widget to my blog, but it has been giving me the dickens.  Sometimes I can see it, and sometimes I can't.  I'm hoping I have fixed the problem, but would you let me know if you can't see it.  If you can't see it, try clicking on my blog banner to see if you can see it then.  It is supposed to be just below the Pink Saturday button on my right sidebar.  Now on to the fun!

My pink contributions for this Pink Saturday are these darling clip art pins.  These were made by our very own Elyse at Cottage Tinkered Treasures,  and she made them just for me.  They are adorable, and make organization pretty.  I've got mine attached to my inspiration board in my office, and they are holding ribbons, coupons, etc.  Elyse sells these in her Etsy shop, Tinkered Treasures.  Thank you, Elyse.

What's My Question Wednesday

Cuban Quesadillas

I lived in south Florida most of my life, and that is where I learned to love Cuban food.  It is unquestionably my favorite ethnic food.

I have seen recipes for Cuban Quesadillas, and this is my version.  I prepare one of these per person.  And, I can never eat all of mine.  They are quite filling - and very tasty.

• One burrito-size tortilla per person
• Yellow mustard
• Two slices Black Forest ham
• Two sandwich-cut dill pickle slices
• Two slices roast pork
• Two slices Swiss cheese

Spread one side of tortilla with mustard.  Then layer ham, pickle slices, pork and cheese on one half of the tortilla.  Fold other half of tortilla over filled half.

I cook mine on my George Foreman grill for about three minutes.  Remove to a plate, and allow to cool for one minute.  Then slice into wedges and serve.  They are delicious served with plantain chips.

Cindy at My Romantic Home is hosting a giveaway the second Monday of each month, and I was the lucky winner last month.  I was so excited to receive Cindy's e-mail that I had won this pretty Mary Engelbreit covered cheese dish.  I've placed it on the island in our kitchen, and it has already received compliments.

You know yellow is my favorite color, and you all realize how I feel about the color pink.  It couldn't be more perfect, and I love it.

And, now for my answer to yesterday's question, yes, I can swim.  I actually learned to swim when I was about nine years old.

I had polio when I was seven years old, and I had to wear braces for about nine years.  We have pictures of me and my father in the Atlantic Ocean, and he has such a frown on his face because he was scared I was going to drown with the weight of the braces.  Needless, to say his worry was not necessary - I survived.
