I made this for the first time for our Fourth of July dinner. I found the recipe at the Good Housekeeping website, and I decided to give it a try.
- 3 pounds sweet potatoes, peeled and cut into 1-inch chunks
- 1 lemon juiced
- 2/3 cup buttermilk
- 1/4 cup light mayonnaise
- Salt and pepper
- 3 stalks celery, thinly sliced
- 1/4 cup red onion, minced
- 1/4 cup loosely packed fresh parsley leaves, chopped
- In 6-quart saucepot, place potatoes and enough water to cover; heat to boiling over high heat. Reduce heat to medium-low; cover and simmer 8 minutes or until potatoes are just tender.
- Meanwhile, from lemon, grate 1 teaspoon peel and squeeze 1 tablespoon juice. In large bowl, whisk lemon peel and juice with buttermilk, mayonnaise, 1/2 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper. Stir in celery, onion, and parsley.
- Drain potatoes; cool 10 minutes. Add to dressing in bowl and gently stir until potatoes are well coated. Makes about 8 cups. Spoon potato salad into large container with tight-fitting lid. Can be refrigerated up to 1 day.
After preparing it, I thought it needed a bit more "zip", so I added 3 tablespoons of spiced mustard and one diced Granny Smith apple.
I thought it was delicious, and I hope you will, too. Oh, and I forgot to take a picture. This is one I found with the recipe.

A little red head woke me up waaaay tooooo early this morning---I had not recouped from yesterday's fun day and night!!! Anyway, I thought I'd pop in while she's destroying the office around me as I type----that sweet potato salad sounds very good. I love sweet potatoes, so I know I would like that. I LOVED your 4th of July tablescape--it's so great that you've had the tablecloth, dishes and napkins for so long and they are still among your favorites in decorating a table.!! That sounds yummy!!!! I haven't thought about making a sweet potato salad before. I'm not sure about the buttermilk though since I've never had it before.

That looks delicious! I once made a sweet potato salad where you roasted the cut up potatoes rolled in olive oil in a hot oven - that was good, too!
