Yesterday, in my post, I stated that Tres Leche was on the menu for our Easter dinner. Some of you have asked about Tres Leche, and I wanted to share the recipe for the luscious, rich and very calorie-laden dessert.
Tres Leche is named for the three milks in the soaking liquid - leche means milk in Spanish. The three milks in the soaking liquid are sweetened condensed milk, evaporated milk and heavy cream. Additionally, heavy cream is whipped for the icing. Sometimes I sprinkle on cocoa before placing the cherry in the center.
Be warned. This dessert is heavenly. My family loves it, and considers this a special treat. It is definitely not for the lactose intolerant. And, because it is so rich, it goes a very long way. Keep it in the refrigerator - it gets better left over.
- 1 cup all-purpose flour
- 1-½ teaspoon baking powder
- ¼ teaspoon salt
- 5 eggs
- 1 cup sugar
- 1 teaspoon vanilla
- ⅓ cup milk
- 1 12-ounce can evaporated milk
- 1 14-ounce can sweetened condensed milk
- ¼ cup heavy cream
- 1 pint heavy cream
- 3 Tablespoons sugar
Preheat oven to 350 degrees. Spray 9x13 inch pan with non-stick spray.
Combine flour, baking powder and salt in a bowl.
Separate eggs, and beat egg yolks with 3/4 cup sugar on high speed until light yellow. Stir in milk and vanilla. Pour over the flour mixture and stir gently until combined.
Beat egg whites at high speed until soft peaks form. Add remaining 1/4 cup sugar, and beat until egg whites are stiff. Fold egg white mixture into the batter until combined. Pour in pan, and spread evenly.
Bake for 45 minutes or until a toothpick comes out clean. Turn cake on a large platter with a rim, and let cool. If you don't have a platter, you can leave it in the glass baking pan.
Combine condensed milk, evaporated milk, and heavy cream in a bowl with a spout. Make holes in cake surface with a fork. Slowly pour liquid over entire cake surface, reserving one cup. Be sure to cover all the way - including edges.
Refrigerate overnight to let the cake to absorb the milk mixture. Evenly spread the icing over the entire cake top.
To serve, cup cake into squares, and garnish by placing a whole maraschino cherry in the center of each square.
