Today I am Serving Up Autumn
with my
Pumpkin Soup.
Two shallots
Two pounds ground Italian sausage
One 32 ounce box chicken broth
Two 16 ounce cans pureed pumpkin
One
pound sliced fresh mushrooms, sauteed
Two 14.5 ounce cans diced potatoes
One
quart heavy cream (or half and half if you prefer)
Finely chop two shallots and cook in two tablespoons olive oil until translucent. Add in two pounds ground Italian sausage and brown. Stir in two cans pureed pumpkin and two cans diced potatoes. Add 32 ounce box of chicken broth, one pound sliced mushrooms and salt and pepper to taste. Cook on low about 45 minutes to meld flavors. Stir in one quart of heavy cream prior to serving.
Note: I always end up adding in a bit more chicken broth to get a consistency I like. And, I also like adding just a bit of grated nutmeg.

Your pumpkin soup sounds delicious, Beverly. I'll have to reread the recipe but I didn't see any gluten in it. I love seeing LaVerne's book - the first book that had everyones pages. It was gorgeous. Since I do not cook much anymore, I would really enjoy some of your homemade soup. I cannot believe you never had a candy apple. That was the only reason I wanted to go to the fair in my young days. I have not had one in a long time tho.

I love pumpkin in any form, Beverly, and it is quite nice served as a soup. I can't eat candy apples any more --my teeth would protest too much ...lol!

Your pumpkin soup sounds yummy! I had a bowl at a restaurant a couple weeks ago. It is a nice change! Thank you for hosting and for sharing!
Please pray for Nick. He and his team run in the Nat'l Championship XC race tomorrow at Mt. Vernon, IL. He is having fun and seeing soem sights but his knees were giving him trouble so please pray he runs well as well as his team and his knees hold up and he can run a good solid race!

Good morning Beverly. Would you believe we just got up about 30 minutes ago? The cold weather and an electric blanket feels soooooo good these days. Since Cheri' has a heated doggie bed we turn the heat way down each night. Life is good.
I will attest to the taste of this delicious pumpkin soup. Since I had this great soup at your house, I came home and made it. Yum. Bill loves it too. I just made a huge pot of mystic vegetable chicken soup. I didn't have a recipe (except in my head,) leftovers and frozen veggies with chicken broth was the start. Then LOTS of additional ingredients from my cupboard. Mmmmmmm, it was so good.

Hi Beverly! So good to post with you again this week.That soup recipe looks so good, especially since I have a cold and feel a bit under the weather. I am sharing my tee-pee I made for my granddaughter this week. I think it turned out so cute!
