I lived in south Florida most of my life, and that is where I learned to love Cuban food. It is unquestionably my favorite ethnic food.
I have seen recipes for Cuban Quesadillas, and this is my version. I prepare one of these per person. And, I can never eat all of mine. They are quite filling - and very tasty.
- One burrito-size tortilla per person
- Yellow mustard
- Two slices Black Forest ham
- Two sandwich-cut dill pickle slices
- Two slices roast pork
- Two slices Swiss cheese
Spread one side of tortilla with mustard. Then layer ham, pickle slices, pork and cheese on one half of the tortilla. Fold other half of tortilla over filled half.
I cook mine on my George Foreman grill for about three minutes. Remove to a plate, and allow to cool for one minute. Then slice into wedges and serve. They are delicious served with plantain chips.
