Ever wonder why I don't share many recipes here?
Even though I really enjoy cooking and entertaining?
Well, the answer is that I am really not much of a recipe cook.
I am more often a "fly by the seat of your pants? cook.
Oh, yes! The other reason is I never remember to take a photo.
Following is a perfect example.
My husband had been wanting a smoker,
and just last week he ordered one, it was delivered
and he smoked for the first time.
He smoked two pork butts,
and they smelled and tasted so good.
We got rolls to make sandwiches,
and our son and grandson were bringing chips and dessert.
I called my girlfriend to come over to join us.
Then I decided I better throw together some kind of side dish.
I looked in the pantry and pulled out a can each of
black beans, cannellini beans, corn niblets
and a jar of chopped pimiento.
(Just about any kind of bean would work.)
Next I look in the refrigerator vegetable drawer
and pulled out a zucchini, some fresh parsley
and some green onions.
I also pulled a pack of diced pancetta out of the freezer.
I rinsed and drained the beans, corn and pimiento
and poured them in a medium sized bowl.
I diced the zucchini, chopped the parsley and green onion
and added them to the bowl.
Finally, I added the diced pancetta (which I cooked on a paper towel
in the microware for about one minute) to the mix.
I seasoned to taste with rice vinegar, salt, white pepper
and stevia (any sweetener would work).
The salad not only looked colorful, it was delicious
and received rave reviews.
So, there is a share of a lot of my kind of cooking.
Spur of the moment, appetizing, easy
and what I have on hand.
