BLT Soup
Can you hear me sighing?
Oh my goodness. So, so good.
About a month ago, my husband and I went to Merritt's Store & Grill in Chapel Hill, North Carolina to get some lunch. Merritt's is one of our favorite places to eat, and it is always busy. They have minimal inside seating plus a few tables for eating outside. That day the inside seating was taken, and it was way too chilly for dining outside. We ate in my husband's Explorer. This included lip and finger licking. We each had a cup of soup and we shared a burger. The soup was BLT, and it was so...good.
Monday three of my cousins came over to visit, and I offered to fix lunch. With my mother, there were five of us. I thought of BLT soup, and even though I didn't have a recipe, I made up my own. Of course, I had to accompany the soup with grilled cheese sandwiches. Everyone loved it, so I am going to share what I did with you. Unfortunately, I forgot to take a photo. The photo I am sharing is from Merritt's Facebook page. My cousin, Teresa, brought dessert from Cheesecake Factory. Totally worthy of another sigh.
- Two 28 ounce cans crushed tomatoes with basil
- One quart box chicken stock
- 2/3 cup Hormel real crumbled bacon
- Season to taste - I used kosher salt, ground white pepper, garlic powder, Hungarian paprika, onion powder, cayenne pepper and sugar.
- One pint heavy cream
I heated it in my crock pot on low for two hours.
Garmish with shredded iceberg lettuce.
